Cheesy Cauliflower Casserole

Everyone needs a good go-to side dish and this cauliflower casserole is definitely ours!  When we first started following the keto lifestyle we didn’t have a lot of recipes in our arsenal to choose from. We tried a lot of new dishes (both good and bad).  When we stumbled onto this dish we were hooked.   Each week we make a few batches to assure we never run out.  This makes for the perfect side dish and goes great with any meat.

Ingredients

¼ cup sour cream ½ cup shredded cheese ¼ cup cream cheese 1 bag/2 cups cooked cauliflower rice Chicken optional Jalapenos optional

Instructions

  1. Pre-heat oven 450 degrees
  2. Cook cauliflower
  3. Cube cream cheese and place in a pan. Place cooked cauliflower on top of cream cheese and mix together.  Add sour cream, about half shredded cheese and optional chicken and jalapenos.  After all ingredients are mixed together, spread out and smooth the top.
  4. Add remaining cheddar cheese and sprinkle bacon on top
  5. Bake for 15-20 minutes or until bubbly
